Overall all microbes that grow in foods have some sort of a salt concentration optimum. Around that salt concentration the organisms grow more slowly. Each microbe has a different salt optimum, but in general the optima for molds tend to be higher than for other spoilage organisms like bacteria. General Rule the higher the salt, the slower the mold will grow ... but in terms of practicality, it would be difficult to reduce mold spoilage by increasing salt content because the bread would need to be quite salty to inhibit mold growth, and most people don't like really salty bread!

Why is mold growing in my home? Molds are part of the natural environment. Outdoors, molds play a part in nature by breaking down dead organic matter such as fallen leaves and dead trees, but indoors, mold growth should be avoided. Molds reproduce by means of tiny spores; the spores are invisible to the naked eye and float through outdoor and indoor air. Mold may begin growing indoors when mold spores land on surfaces that are wet. There are many types of mold, and none of them will grow without water or moisture.

Architect Gantt blamed for work in third NCCU building The Associated Press Aug 19, 2003 : 5:23 pm ET DURHAM, N.C. -- Former Charlotte mayor Harvey Gantt's architectural firm -- blamed for faulty design of two dorms contaminated with mold -- also angered North Carolina Central University officials with delays and design problems on another building. Campus administrators knew soon after two dormitories opened in 1999 that the buildings were plagued by water leaks, climate-control problems and generally poor construction. The dorms are plagued with a potentially toxic black mold. Also in 1999, NCCU withheld payment of more than $1 million in architectural fees on the university's School of Education, which also was beset with delays and alleged design glitches. The building opened in August 2000, but the university didn't release its payment to Gantt Huberman Architects of Charlotte until February 2002 after the State Construction Office mediated the dispute. The education building has not been found to be contaminated with mold or having any other continuing building defects. Records show that electronic card readers for the entrances, electrical work, the telecommunications system and other fixtures weren't working when the building opened. The State Construction Office rejected the architect's final report on the building and a request for his $1 million design fee, saying the project was incomplete. The university also had complained that the building was behind schedule. It had been was scheduled to open in 1998, two years before it was completed. As the chief architect on that project and the education building, Gantt was responsible for coordinating and approving the work. Gantt, the Democrat who tried unsuccessfully in 1990 and 1996 to defeat former U.S. Sen. Jesse Helms, declined to comment on his NCCU projects Monday. He did not immediately return a phone message Tuesday. Under state construction rules, Gantt's firm was not required to bid for the NCCU design contracts. State departments and universities are allowed to select their own architects and the State Construction Office then negotiates their fees. All other construction contracts are subject to competition and are awarded to the lowest responsible bidder. NCCU's Board of Trustees selects architects for the jobs. Gantt is a longtime friend of former NCCU Chancellor Julius Chambers. The dorms are the newest of 14 buildings on campus that university officials have identified as being contaminated with mold -- some with a potentially toxic mold called Stachybotrys chartarum. The problems have forced about 900 students into emergency housing, with some beginning to move into local hotels Monday. The buildings have been closed for at least the fall semester and the school will be forced to gut a significant portion of the rooms -- costing millions. The university won't know the full extent of the problem for weeks. The water leaks and other problems appear to be the cause of the mold infestation.
